Homemade Steamed Fruit Cake
Ingredients
Caramel mixture
- 1.5 cups granulated sugar
- 0.5 cups hot water
- 250g butter
- 500g mixed fruit
Dry
- 325g all-purpose flour (about 2.5 cups)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 0.5 teaspoon ground cinnamon (optional)
Egg mixture
- 3 large eggs
- 1 teaspoon orange flavoring
- Optional: 2 tablespoons sunquick
Preparation
Heat the sugar in a pan over low heat until it turns dark brown.
Gradually add hot water and cook until the sugar dissolves.
Add butter and stir until it melts.
Add mixed fruit and cook until the mixture boils, then remove from heat and let it cool.
Sift the dry ingredients (flour, baking powder, baking soda, and optional cinnamon) three times.
Gradually add the sifted dry ingredients to the cooled sugar mixture, stirring until well combined.
Beat the eggs until fluffy and foamy.
Add orange flavoring and optional sunquick to the eggs and mix well.
Add the egg mixture to the batter and stir until even.
Pour the batter into a greased and baking paper-lined cake pan, or just greased if using a plastic mold.
Cover the pan with plastic wrap or aluminum foil to prevent steam condensation from dripping onto the cake.
Ensure the steaming water is boiling before placing the pan in the steamer.
Steam the cake for 2 hours, using medium heat for the first hour and low heat for the second hour.
Allow the cake to cool completely before cutting.
