Spicy Indonesian Beef Stir-Fry

Ingredients

  • 350 grams koyor (can substitute with beef scraps)
  • 250 grams beef
  • 3 stalks lemongrass, smashed
  • 5 lime leaves
  • 1/2 tablespoon palm sugar
  • 1 tablespoon sweet soy sauce
  • Salt to taste
  • Black pepper powder to taste
  • Beef bouillon powder to taste

Chopped spices

  • 6 cloves garlic
  • 12 shallots

Sliced spices

  • 3 green onions
  • 20 bird's eye chilies
  • 5 curly red chilies

Preparation

  1. Prepare all ingredients by chopping or slicing as specified

  2. Sauté the chopped spices in oil until fragrant

  3. Add lemongrass and lime leaves, cook for a few minutes

  4. Incorporate the beef and koyor, stir-fry until browned

  5. Mix in palm sugar, sweet soy sauce, salt, pepper, and bouillon powder, adjust seasoning to taste

  6. Add sliced green onions and chilies, cook until vegetables are tender and dish is well combined

  7. Serve hot

Notes

  1. This recipe uses a chopper for preparing spices, which can make the process easier and faster

  2. Adjust spiciness by varying the amount of chilies according to preference

  3. Koyor can be replaced with other beef cuts if unavailable
