Traditional North African Shakshuka
Ingredients
- 4 eggs
- 250g canned tomatoes
- 1 large red pepper or 2 small
- 2 spring onions
- 1 tablespoon harissa
- sweet paprika or cumin
- olive oil
- salt
Preparation
Heat olive oil in a skillet over medium heat.
Add chopped spring onions and red pepper; sauté until softened.
Stir in canned tomatoes, harissa, sweet paprika or cumin, and salt; simmer for about 10 minutes.
Make wells in the sauce and crack the eggs into them.
Cover and cook until the eggs are set, about 5-10 minutes.
Serve hot.
