Traditional North African Shakshuka

Ingredients

  • 4 eggs
  • 250g canned tomatoes
  • 1 large red pepper or 2 small
  • 2 spring onions
  • 1 tablespoon harissa
  • sweet paprika or cumin
  • olive oil
  • salt

Preparation

  1. Heat olive oil in a skillet over medium heat.

  2. Add chopped spring onions and red pepper; sauté until softened.

  3. Stir in canned tomatoes, harissa, sweet paprika or cumin, and salt; simmer for about 10 minutes.

  4. Make wells in the sauce and crack the eggs into them.

  5. Cover and cook until the eggs are set, about 5-10 minutes.

  6. Serve hot.
