Sweet Potato Mash Breakfast Bowl

Ingredients

  • 1 sweet potato
  • coco cacao granola
  • 1/2 banana
  • organic peanut butter
  • granola
  • cacao nibs
  • plain yogurt
  • blueberries
  • apple pie spice
  • cookie dough bar

Preparation

  1. Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it for another 45 minutes to soften.

  2. Mash the baked sweet potato.

  3. Top the mashed sweet potato with coco cacao granola, sliced banana, organic peanut butter, more granola, cacao nibs, plain yogurt, warmed blueberries sprinkled with apple pie spice, and pieces of cookie dough bar.

  4. Optionally, eat the bowl cold or heat it up before serving.
