Black Forest Chocolate Brownie Pancakes

Ingredients

  • 1 banana, mashed
  • 40g oats, milled
  • 10g cocoa powder
  • 100ml soya or nut milk
  • 1 tsp baking powder
  • 1 tsp lemon juice
  • 1 tsp coconut oil for frying

Preparation

  1. Mix all of the ingredients into a bowl

  2. Fry in a teaspoon of coconut oil

  3. Flip when browning

  4. Serve with warmed red fruit such as berries and rhubarb or chopped plums

Optional toppings

  1. Top with a tablespoon of coconut yoghurt, a sprinkle of coconut flakes and a tablespoon of maple syrup
