Vegan Chocolate Protein Mini Pancakes

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup gluten free flour
  • 1 banana mashed
  • 1 cup dairy free milk
  • 2 scoops protein powder (54 grams)
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 TB coconut oil or vegan butter for frying

Preparation

  1. Place all ingredients in a blender on high to make the batter

  2. Heat up a skillet with the oil or butter to get them perfectly crisp

  3. Using a measuring cup or a ziplock bag with a cut corner, transfer batter to the skillet and cook

  4. Cook on low-medium heat until bubbles appear on top of the pancakes, then flip

  5. This makes a big batch that can be prepared for multiple meals

  6. Top with syrup or pour milk over them in a bowl like cereal
