Vegan Chocolate Protein Mini Pancakes
Ingredients
- 1/2 cup rolled oats
- 1/2 cup gluten free flour
- 1 banana mashed
- 1 cup dairy free milk
- 2 scoops protein powder (54 grams)
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 TB coconut oil or vegan butter for frying
Preparation
Place all ingredients in a blender on high to make the batter
Heat up a skillet with the oil or butter to get them perfectly crisp
Using a measuring cup or a ziplock bag with a cut corner, transfer batter to the skillet and cook
Cook on low-medium heat until bubbles appear on top of the pancakes, then flip
This makes a big batch that can be prepared for multiple meals
Top with syrup or pour milk over them in a bowl like cereal
