Flax Banana Oat Pancakes

Ingredients

  • 1 banana
  • 100g oats
  • 2 tbsp ground flax
  • 1 tsp baking powder
  • 50g pecan nuts
  • 180-200ml plant milk
  • A dash of cinnamon and/or nutmeg
  • Small amount of coconut oil

Preparation

  1. Blitz the oats, flax and pecans in a Nutribullet to a fine-ish flour consistency.

  2. In a separate bowl, mash a banana.

  3. Add in the oats, pecans and flax mixture together with the baking powder.

  4. Gradually pour in the milk, stirring constantly, to make a thick batter.

  5. Heat a small amount of coconut oil in a frying pan and, when hot, spoon in small amounts of batter and flatten or shape them.

  6. When the bottom of the pancake is light brown, lift it and check, then flip it over and cook the other side similarly.
