Brazilian Banana Cream Pie with Meringue
Ingredients
Caramel layer
- 8 bananas
- 1 cup sugar
- 1/2 cup water
Cream filling
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 3 egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
Meringue topping
- 3 egg whites
- 3 tablespoons sugar
Preparation
Heat sugar in a saucepan over medium heat until golden, then add water and stir until dissolved.
Add bananas and cook until golden but not falling apart, then transfer to a baking dish.
In a saucepan, combine the cream ingredients and cook over medium heat, stirring constantly, until thickened, then pour over the bananas.
Beat egg whites with sugar until stiff peaks form, then spread over the cream.
Bake at 350Β°F (175Β°C) for 15 minutes, or until the meringue is lightly browned.
Serve cold or warm.
