Chickpea Curry
Ingredients
- 1 tsp ground cumin
- 1 tsp Garam massala
- 1 tsp coriander in powder
- 1 turmeric
- salt
- 1 small bunch of coriander
- 2 tomatoes finely diced
- 1 tsp sesame oil or coconut oil
- 1 chopped onion
- 2 chopped garlic cloves
- 3 cm grated fresh ginger
- 2 cups cooked chickpeas
- 150 ml coconut milk
Preparation
Heat the oil, caramelise the onion and garlic, add salt and spices and cook them all for 1 minute
Add the tomatoes and coconut milk and simmer for a few minutes, then add the chickpeas and simmer for about 10 minutes
Serve with rice
