Creamy Sweet Potato & Coconut Curry

Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 yellow bell pepper, thinly sliced
  • 1 small broccoli, cut into florets
  • 1 garlic clove, minced
  • 1 piece of ginger, minced (12 g)
  • 2 Tbsp rapeseed oil
  • 1 can coconut milk
  • Curry spice mix (2 tsp ground coriander, 1,5 tsp turmeric, 1,5 tsp cumin, 1/2 tsp cayenne pepper, 1 tsp salt)
  • 1 squeeze of lemon juice

Preparation

  1. Heat up oil in a large saucepan

  2. Add minced garlic, ginger and spices and sauté for a minute

  3. Add the sweet potato and bell pepper and sauté for half a minute before adding the coconut milk

  4. Bring to a boil and let simmer with a closed lid for 15 min

  5. Add the broccoli and let simmer for another 10 minutes

  6. Add lemon juice, salt and pepper to taste

  7. Enjoy ?
