Easy Healthy Fluffy Apple Cake
Ingredients
Cake
- 60 g nut butter
- 200 ml soy milk
- 120 g sweetener (e.g., erythritol with stevia)
- 200 g spelt flour
- 50 g spelt semolina or additional flour
- vanilla Flavedrops or vanilla sugar (optional)
Filling
- 3 large apples (e.g., boskop)
- 1 teaspoon ceylon cinnamon
- 1 teaspoon starch
- 1 tablespoon raisins
- 1 tablespoon mixed nuts
Caramel sauce
- 1 tablespoon date syrup
- 1 teaspoon peanut butter
- water (as needed)
Preparation
Preheat the oven to 180°C (350°F)
Mix all ingredients for the dough
Spread one-third of the dough in a 25 cm cake tin that has been oiled or lined with baking paper
Cut two apples into pieces (not too small)
Mix the apple pieces with cinnamon, starch, raisins, and nuts
Spread the apple mixture over the dough in the tin
Top with the remaining dough
Cut the third apple into slices and use them to decorate the top
Bake for 60-80 minutes with upper and lower heat
Caramel sauce
Mix 1 tablespoon date syrup with 1 teaspoon peanut butter
Add a little water if needed to achieve desired consistency
