Empty the Fridge Curry
Ingredients
- 1 tbsp grated ginger
- spices: curry powder, turmeric, coriander, smoked paprika (abt 1 tbsp each)
- 1/2 cup dried green lentils, soaked in water at least 2 hours
- 1 cup veggie broth
- 1 diced bell pepper
- 1/2 head cauliflower .
- 1/2 head broccoli florets
- 1/3 block firm tofu
- 1/2 can full fat coconut milk
Preparation
Sautée the garlic + ginger in a deep pan over med-low heat, adding in the spices to toast after 3 mins. once everything is fragrant, add in the soaked lentils & enough veggie broth to cover. bring to a boil & cover to simmer until the lentils are almost soft (~5 mins). throw in the veg (pepper, cauli & broccoli), bring the mix to a boil, then simmer & cover again until all soft. add the coconut milk + tofu, boil & simmer again until it’s all cooked! Season to taste (I ended up adding a ton more spices) & serve over rice
Loooove making empty the fridge curries- such a great way to use up veg about to go bad! Very simple method— just add veg + protein, boil, simmer & taste ? this veg, lentil & spice combo was SO BOMB highly recommend making this comforting curry for your fam during quarantine
