Filipino Adobo

Ingredients

  • tofu 250g⁣
  • dried shiitake mushrooms 6⁣
  • garlic, diced 4 cloves⁣
  • onion, diced 1⁣
  • carrot, sliced 1⁣
  • soy sauce 2/3 cup⁣
  • cane vinegar 1/3 cup⁣
  • bay leaves 6⁣
  • black whole peppercorns 1/2 tsp ⁣
  • brown sugar 3 tbs⁣
  • veg oil

Preparation

  1. Freeze tofu, then thaw and cut into chunks ⁣

  2. Rehydrate shiitake in hot water for 20+ min⁣

  3. Heat pot on medium, add oil then bay leaves + peppercorns and temper for 1-2 mins ⁣

  4. Add garlic + onion, saute ⁣

  5. Add carrot, turn temp to low-med and cover for 5 mins ⁣

  6. Uncover then add soy sauce + vinegar, tofu, mushrooms - mix well⁣

  7. Add brown sugar, stir well ⁣

  8. Reduce for 20 mins - serve
