Filipino Adobo
Ingredients
- tofu 250g
- dried shiitake mushrooms 6
- garlic, diced 4 cloves
- onion, diced 1
- carrot, sliced 1
- soy sauce 2/3 cup
- cane vinegar 1/3 cup
- bay leaves 6
- black whole peppercorns 1/2 tsp
- brown sugar 3 tbs
- veg oil
Preparation
Freeze tofu, then thaw and cut into chunks
Rehydrate shiitake in hot water for 20+ min
Heat pot on medium, add oil then bay leaves + peppercorns and temper for 1-2 mins
Add garlic + onion, saute
Add carrot, turn temp to low-med and cover for 5 mins
Uncover then add soy sauce + vinegar, tofu, mushrooms - mix well
Add brown sugar, stir well
Reduce for 20 mins - serve
