Homemade Pesto Chick’n Lasagne with G Bread and a Side Salad

Ingredients

  • To make this I fried 1 onion and 3 cloves of garlic in oil until soft. Then
  • I added some mushrooms and fried for another 3 mins or so. After
  • I added some @icelandfoods no chicken pieces
  • sprinkled with some pain flour and added half a pint-ish of veg stock and some broccoli. After that simmered down nice n thick
  • I added some pesto. I was v lazy and used the @marksandspencer plant kitchen béchamel which pretty tastiiii tbf. Then layered the tings all up in a lasagne dish
  • covered the top with some vegan cheese and then sprinkled on some herbs n pine nuts. I cooked in the oven for about 30 mins n came out looooovely. Next time
  • I think I’ll used a basic tomato sauce in between the layers to add a bit of sharpness to the flavour. Was perfectly fine without but just a personal preference
