Macro Friendly Chicken & Waffles

Ingredients

  • •Cut some chicken breast into strips
  • •For 400g of chicken breast, you'll need 20g flour, 1 beaten egg, 40g grated parmesan and 110g breadcrumbs
  • •Coat the strips with flour, then dip in beaten egg, then dip in the breadcrumb & parmesan combo
  • •Place on a wire rack and cook in teh oven at 180C for around 18-20minutes

  • •In a pan, add 150ml milk and 30g butter (I used almond and lurpak lighter) and heat until the butter melts
  • •Separate the yolk and the whites of 2 eggs
  • •Whisk up the yolks and add to the milk mix
  • •In a separate bowl, combine 160g plain flour, 6g baking powder, salt and pepper
  • •Add the milk mixture to the dry ingredients and fold together
  • •Whisk up the egg whites into stiff peaks and fold into the mixture
  • •Cook in a waffle maker
