Peach Tart
Ingredients
- 1 14-oz. package puff pastry
- 1 pound peaches, pitted cut into 1/2 wedges (about 3 large peaches)
- 4 oz. plain or honey goat cheese, softened to room temp for easy spreading
- 2 tbsp. coconut sugar
- 1 1/2 tsp. ground black pepper
- 2 tbsp. honey
- fsalt & fresh thyme
Preparation
Preheat oven to 400 & line a baking sheet w/ parchment paper
Wash & slice peaches into 1/2” wedges and set aside
Remove thawed pastry from box, roll out onto floured parchment paper to a large rectangle about 15x10” Prick with a fork in the middle of the pastry leaving 1/2-1” border around the edges then slide parchment paper onto baking sheet
Smear the goat cheese all over the middle of the pastry/where you pricked the holes & layer your peaches in rows of 4, slightly overlapping
Sprinkle peaches with sugar & black pepper and bake for 30 mins until edges of pastry are golden and puffed
Remove from oven and let cool, then sprinkle with salt, drizzle with honey and some fresh thyme
