Salted Peanut Butter Cookies
Ingredients
- 1 1/3 cup spelt flour
- 1 tsp baking powder
- 1 tsp sea salt
- 2/3 cup unsalted butter
- 1/2 cup + 1Tbs coconut blossom sugar
- 1/2 cup white sugar
- 1 cup runny peanut butter
- 1 egg
- 1 tsp vanilla extract
- Maldon salt flakes for sprinkling
Preparation
Preheat oven to 175C and line a baking tray with parchment paper.
Whisk together flour, baking powder and salt.
In a large bowl combine butter, sugar, peanut butter, egg and vanilla. Mix with an electric mixer until smooth and creamy.
Add the dry ingredients and mix until combined. Don’t overmix.
Scoop out heaped tablespoons and roll into a ball and place on baking sheet. Flatten using a fork and making cross hatch lines.
Sprinkle with Maldon sea salt or some coconut sugar, your preference.
Bake until the edges are deep brown – about 12-14 minutes.
Tips
Bake. Bake. Bake. Who doesn’t love a little cookie dough, or licking the bowl spotlessly clean.
Make sure you have all the ingredients first before you suggest a recipe. Nothing kills a mood faster than an unfulfilled promise.
Let your kids take the lead. Things don’t have to be perfect.
Make things they will actually eat. I find my kids will eat a lot of foods they usually refuse if they’ve been involved in the cooking.
Keep it simple and flop proof. Avoid disappointment at all costs.
Make sure they aren’t too hungry before you start.
Sing their praises for what they’ve made.
Keep things short. Little attention spans won’t manage much past 30 minutes max.
Cleaning up fun. Set a timer. Turn up the music. Race the clock. My kids love the challenge and by the time the alarm sounds, my kitchen is usually spotless.
Use the time as a lesson in giving. We often bake treats for the neighbour, teachers or other family members.
