Stuffed Crepes with Nuts and Syrup

Ingredients

Dough

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon corn oil
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon turmeric

Filling

  • Qaymar (clotted cream)
  • Pistachios
  • Almonds

For serving

  • Qaymar (clotted cream)
  • Nuts
  • Syrup

Preparation

  1. In a blender pitcher, place the egg, vanilla, oil, milk, flour, salt, and turmeric. Blend on medium speed for one to two minutes until you get a smooth liquid batter.

  2. Using a plastic tube with a small opening, fill it with some crepe mixture.

  3. On medium heat, warm a wide skillet.

  4. Pour the crepe mixture into the skillet in a net shape and wait a few seconds until the surface dries, then flip to the other side. The crepe will cook quickly, so be careful not to burn it.

  5. Transfer the crepe to a large plate. Repeat the process with the remaining batter.

  6. For the filling, in a deep plate, place the qaymar, pistachios, and almonds. Mix the ingredients together.

  7. For serving, place 2 tablespoons of filling in each crepe sheet, then roll it into an envelope or wrap shape as desired.

  8. Spread a little qaymar over each piece of crepe, garnish with nuts, and serve immediately with syrup as desired.
