Taco Soup
Ingredients
- 1 tbsp avocado or olive oil
- 1 large onion, chopped
- 3-4 garlic cloves, roughly chopped
- 1 bell pepper, chopped
- 2 ribs of celery, chopped
- 2 medium carrots, chopped
- 2 cups of diced tomatoes
- 1 pouch of taco seasoning (i like @simplyorganicfoods )
- 1/4 cup green chilis
- 2 (398ml) cans of black beans
- 2 (398ml) cans of red kidney beans
- 6 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp cumin
- 1/4 cup salsa
- a big pinch of salt & pepper
Preparation
Start by heating oil over medium heat in a large soup pot
Add onions and cook for about 3 minutes until they begin to soften
Add garlic, bell pepper, celery, carrot and let cook for 5 minutes
Stir in taco seasoning, diced tomatoes, green chilies, black and kidney beans, oregano and cumin until everything is well coated in spice mix
Pour in vegetable broth, salsa and season with salt & pepper
Turn heat to a simmer and let soup cook for 20-30 mins to combine flavours
Once soup is done, use an immersion blender to blend soup
Top it off with all of your favourite taco fillings! here is a few topping ideas: cilantro, cheese, cashew cream, salsa, avocado, jalapeños, tortilla chips
