Teriyaki Tempeh Stir Fry
Ingredients
- ◦ 8oz of tempeh⠀
- ◦ 1tbsp coconut oil OR you can go completely oil free!⠀
- ◦ Coconut aminos ⠀
- ◦ Garlic powder⠀
- ◦ Onion powder⠀
- ◦ 1tsp apple cider vinegar⠀
- ◦ 1tbsp maple or agave syrup (optional)⠀
- ◦ 1/2tsp cornstarch ⠀
- ◦ Mix of veg! (Red and green peppers, broccoli, carrots, aubergine—the more the better!)⠀
- To top:⠀
- ◦ Cashews⠀
- ◦ Scallions or spring onion⠀
Preparation
Cut your tempeh up and optionally pop in the oven to roast for around 10 minutes
Add all ingredients into a bowl and mix together, then adding the tempeh letting it soak for 20 minutes
Heat oil in the pan (or cook completely oil free), and cook the tempeh for around 3-5 minutes until crispy
Add your mixed veg and pour the rest of the sauce into the pan, cooking everything for another 5-8 minutes
Voila! You have a delicious serving of teriyaki tempeh that you can serve over rice, noodles, salad, or even potatoes if you wish! Top with cashew nuts and scallions for some extra deliciousness
