Teriyaki Tempeh Stir Fry

Ingredients

  • ◦ 8oz of tempeh⁠⠀
  • ◦ 1tbsp coconut oil OR you can go completely oil free!⁠⠀
  • ◦ Coconut aminos ⁠⠀
  • ◦ Garlic powder⁠⠀
  • ◦ Onion powder⁠⠀
  • ◦ 1tsp apple cider vinegar⁠⠀
  • ◦ 1tbsp maple or agave syrup (optional)⁠⠀
  • ◦ 1/2tsp cornstarch ⁠⠀
  • ◦ Mix of veg! (Red and green peppers, broccoli, carrots, aubergine—the more the better!)⁠⠀
  • To top:⁠⠀
  • ◦ Cashews⁠⠀
  • ◦ Scallions or spring onion⁠⠀

Preparation

  1. Cut your tempeh up and optionally pop in the oven to roast for around 10 minutes

  2. Add all ingredients into a bowl and mix together, then adding the tempeh letting it soak for 20 minutes

  3. Heat oil in the pan (or cook completely oil free), and cook the tempeh for around 3-5 minutes until crispy

  4. Add your mixed veg and pour the rest of the sauce into the pan, cooking everything for another 5-8 minutes

  5. Voila! You have a delicious serving of teriyaki tempeh that you can serve over rice, noodles, salad, or even potatoes if you wish! Top with cashew nuts and scallions for some extra deliciousness
