Vegan Croquettes

Ingredients

  • 1 large carrot
  • ▫️200g white cabbage
  • ▫️4 medium potatoes
  • 1tsp chopped garlic
  • ▫️1tsp paprika
  • ▫️1tsp ground black pepper
  • ▫️1tsp salt
  • ▫️200g gram flour
  • ▫️chopped coriander roughly 30g (handful)

Preparation

  1. In a food processor, add the grater blade and chuck in everything to grate (you can hand grate but will take longer)

  2. Transfer to a bowl and add the rest of the ingredients

  3. Form croquettes with your hands (the veggies will release water so the mixture will feel soggy but do not fear)

  4. You could coat them with breadcrumbs at this stage as original croquettes are, but I chose not to

  5. Heat 1-2tbsp oil (I used rapeseed) in a frying pan

  6. Shallow fry your croquettes on medium heat turning to brown on all sides

  7. Serve with lemon wedges, any sauce you like or even yoghurt
