Ingredients
- Half an onion
- Half a red pepper
- 3 cloves of garlic
- 2 carrots about to turn bad
- Ginger about to turn bad
- 2 sweet potatoes
- 1 tin of chickpeas
- 1 tin of chopped tomatoes
- 1 spoon of peanut butter
- 1/4 cup of left over coconut milk
- 500ml vegstock (cubes)
- Coriander
- Sri Lankan seasoning mix
Preparation
Then roasted some left over broccoli in olive oil salt pepper and garlic ? and added some fresh juicy cherry tomatoes to lighten it all up
