Vegan Gluten Free Refined Sugar Free Pancakes

Ingredients

  • 1 cup oat flour
  • 1/2 cup quinoa flour
  • 2 tsp baking soda
  • 1 1/2 TBS coconut sugar
  • 1 tsp cinnamon
  • 3/4 cup almond milk
  • 1/2 cup apple sauce
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract

Preparation

  1. Mix all dry ingredients together in bowl

  2. Add all remaining ingredients to the bowl and whisk together (don't overmix)

  3. Use 1/3 measuring cup to pour the batter onto a non-stick pan (low to med heat)

  4. Cook just until pancake batter starts to bubble then turn and cook other side

  5. Top as desired and enjoy
