Vegan Muffins

Ingredients

  • 1 1/3 cup / 200 grams of oat flour
  • 3 ripe bananas
  • 1/3 cup / 75 grams of melted coconut oil
  • 1 tbsp. peanut butter
  • 1 flax egg (1 tbsp. ground flax seeds + 2.5 tbsp. water)
  • 1 cups of pitted and soft dates, chopped
  • 1/2 cup / 100 grams of apple sauce
  • 1/3 cup / 40 grams of cocoa powder
  • 1 tbsp. baking powder
  • 1 tbsp. baking soda
  • 1/3 cup / 50 grams of dark chocolate, chopped
  • 1 tsp. vanilla extract
  • optional: chopped hazelnuts

Preparation

  1. Preheat the oven to 400 F/ 200 C and place paper muffin cups into the muffin tray

  2. Make the flax egg and once it’s gelled, add bananas, apple sauce, peanut butter, melted coconut oil and vanilla extract. Mix until all combined

  3. Add the rest of the ingredients and mix thoroughly again

  4. Divide the batter into the muffin tin and finish with a sprinkle of chopped hazelnuts

  5. Bake the muffins for about 15 minutes or until it’s set. Let it cool for about 5 minutes to serve. ⠀⠀
