Vegan Walnut Meat with Vegetables
Ingredients
Walnut meat
- 3C walnuts
- 1T chili powder
- 2tsp cumin
- 1tsp garlic powder
- 1 tsp paprika
- 1.5T nutritional yeast
Veggies
- 1 yellow onion
- 1-1/4C green peas
- 1-1/4C corn
- 1 lime
- 2T gluten-free tamari or soy sauce
Preparation
In food processor, pulse until texture similar to ground meat, with some larger pieces remaining.
In saucepan, cook onion in a little vegetable broth until translucent, adding more broth as needed when onions start to stick.
Mix in chopped walnut mixture. Cook on medium-low about 5-7 minutes while stirring, adding vegetable broth as needed when dry.
Mix in remaining ingredients. Heat until warmed through before serving. Salt to taste.
