Vegan Walnut Meat with Vegetables

Ingredients

Walnut meat

  • 3C walnuts
  • 1T chili powder
  • 2tsp cumin
  • 1tsp garlic powder
  • 1 tsp paprika
  • 1.5T nutritional yeast

Veggies

  • 1 yellow onion
  • 1-1/4C green peas
  • 1-1/4C corn
  • 1 lime
  • 2T gluten-free tamari or soy sauce

Preparation

  1. In food processor, pulse until texture similar to ground meat, with some larger pieces remaining.

  2. In saucepan, cook onion in a little vegetable broth until translucent, adding more broth as needed when onions start to stick.

  3. Mix in chopped walnut mixture. Cook on medium-low about 5-7 minutes while stirring, adding vegetable broth as needed when dry.

  4. Mix in remaining ingredients. Heat until warmed through before serving. Salt to taste.
