Veggie Patties

Ingredients

  • 1 medium sweet potato mashed (about 2 cups) .
  • 2 medium zucchini grated
  • 1 large carrot grated
  • 1/3 cup finely diced fresh sage & parsley mixed or can sub for 1 tbsp. dried mix herbs
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • 1 tsp dried garlic granules
  • 2 tbsp. coconut flour
  • 1 tbsp. melted coconut oil

Preparation

  1. Preheat oven to 180 degrees Celsius

  2. Place the grated zucchini in a bowl & generously season w/ salt. Let us sit for 10 mins & then squeeze all the water out

  3. Place all ingredients in a large bowl and mash well together with hands

  4. Mould the mix into mini gem like balls (oval shape) & place them on a lined baking tray, make sure there ya space between each one (not jammed in)

  5. Place in preheated oven & bake for 30mins or until golden brown

  6. Serve warm with you fav dipping sauce
