Avocado Minty Ice Cream
Ingredients
- 2 avocados
- 2 bananas
- the solid part of a can of coconut milk (save the rest for smoothies)
- 2-3 tbsp maple syrup
- handful fresh mint
- juice of one lime
- zest lime for topping (optional)
- 1/2 tsp vanilla extract or few drops of natural peppermint oil
- pinch sea salt
- vegan chocolate chips (optional)
Preparation
Just blend all ingredients and put it in a container suitable for the freezer and let it sit for 4 hours or overnight. When serving, let it thaw for around 10 to 15minutes
Enjoy your healthy ice cream! Serve with date syrup on top and crushed pistachios for extra delicious flavors
