Cookies and Cream Froyo Cheesecake Bites

Ingredients

  • 8 oz cream cheese
  • 1/2 cup greek yogurt
  • 1/4 cup maple syrup
  • 12 cookies (gluten-free cocoa and cashew butter, e.g., Simple Mills)
  • Chocolate chips for coating

Preparation

  1. In a food processor, combine the cream cheese, yogurt, and maple syrup.

  2. Transfer the mixture to a mixing bowl and add the crushed cookies.

  3. Use a large cookie scoop to form 7-8 bites on a parchment-lined cookie sheet and freeze for at least 1 hour.

  4. Once frozen, dip the bites in melted chocolate, then freeze for another 10 minutes before serving.
