No-Bake Peanut Butter Chocolate Cookie Cups

Ingredients

Crust

  • 1 cup almond flour
  • 1/4 cup maple syrup

Filling

  • 1/2 cup peanut butter
  • 2 tbsp. maple syrup
  • 1 tsp. vanilla extract

Topping

  • 1/2 cup chocolate chips

Preparation

  1. Stir together the two crust ingredients, then press this dough into a mini muffin tin with liners and freeze for 30 minutes before adding filling.

  2. Stir together the three filling ingredients, then pipe the batter onto the crust, press down with fingers and freeze again for 15 minutes before adding chocolate topping.

  3. Remove from freezer, add a spoonful of melted chocolate over each one and freeze again for 15 minutes.
