Peanut Butter and Jam Squares

Ingredients

Layer 1

  • 100g almond flour
  • 60g peanut butter
  • 50ml maple syrup

Layer 2

  • 2-3 tbsp smooth peanut butter

Layer 3

  • 2-3 tbsp strawberry jam

Optional

  • Sliced strawberries

Preparation

  1. Combine the almond flour, maple syrup and peanut butter together in a large mixing bowl until sticky

  2. Scrape the mixture out into whichever mould you are using and press down using your fingertips. Ensure it is packed down really tightly and smooth on top

  3. Dollop the peanut butter over the first layer and use the back of the spoon to spread a thick layer of it evenly across the top

  4. Repeat this for the jam layer and ensure it is smooth on top

  5. If desired add sliced strawberries across the top of the jam

  6. Place in the freezer and allow to set for a minimum of thirty minutes

Storage

  1. Keep in the freezer and allow a few minutes to thaw out before eating
