Cookie Dough Ice-Cream Sandwiches

Ingredients

  • 4 cups almond flour
  • 1 cup maple syrup
  • 1/2 cup mini chocolate chips
  • 1 quart vanilla ice cream

Preparation

  1. Stir together 2 cups almond flour, 1/2 cup maple syrup, and 1/4 cup mini chocolate chips in two separate bowls.

  2. Line an 8x8 dish with parchment paper and press one bowl of cookie dough down into an even layer.

  3. Spread the thawed vanilla ice cream over the cookie dough layer.

  4. Either freeze until the ice cream has set before adding the second cookie dough layer or press the cookie dough onto a piece of parchment paper and carefully lay it over the ice cream, then freeze.

  5. Freeze for at least 5 hours before cutting into slices.
