Healthy Energy Balls with Dates and Oats

Ingredients

  • 1 cup pitted fresh dates
  • 2/3 cup natural peanut butter (or any nut/seed butter)
  • 1/3 cup quick oats
  • 1 tsp vanilla extract
  • 1 TBSP chia or flax seeds
  • 1/4 cup mini dark chocolate chips

Preparation

  1. If dates are dry, soak them for 10 minutes prior.

  2. Mix the dates in a food processor until chopped into small pieces.

  3. Add the peanut butter, oats, vanilla extract, and chia seeds. Mix again.

  4. Adjust consistency: if too sticky, add 1-2 more tablespoons of oats; if too dry, add 1-2 more tablespoons of peanut butter.

  5. Add the mini dark chocolate chips and mix gently.

  6. Roll the mixture into small balls.

  7. Enjoy right away or store in the fridge.
