Healthy Energy Balls with Dates and Oats
Ingredients
- 1 cup pitted fresh dates
- 2/3 cup natural peanut butter (or any nut/seed butter)
- 1/3 cup quick oats
- 1 tsp vanilla extract
- 1 TBSP chia or flax seeds
- 1/4 cup mini dark chocolate chips
Preparation
If dates are dry, soak them for 10 minutes prior.
Mix the dates in a food processor until chopped into small pieces.
Add the peanut butter, oats, vanilla extract, and chia seeds. Mix again.
Adjust consistency: if too sticky, add 1-2 more tablespoons of oats; if too dry, add 1-2 more tablespoons of peanut butter.
Add the mini dark chocolate chips and mix gently.
Roll the mixture into small balls.
Enjoy right away or store in the fridge.
