Tex Mex Stuffed Peppers
Ingredients
- 4 sweet bell peppers
- 1 1/2 cups cooked brown rice
- 3 cremini mushrooms, chopped
- 1 cup black beans, cooked
- 1 cup spinach, chopped
- 1/2 cup cilantro, chopped
- 1 cup salsa
- 1/2 tsp each salt, pepper, smoked paprika, garlic powder, chili powder, cayenne (optional)
Preparation
Preheat oven to 350°f
Prepare peppers by washing, cutting lengthwise and removing the seeds
Place peppers on a parchment lined baking try and bake for 20 minutes to soften
While they're softening, mix together the rest of the ingredients in a large bowl
Remove peppers from oven and let cool until you are able to pick them up
Generously spoon rice mixture into the peppers and place back on baking tray
Cook for another 20 minutes, add your fav toppings and devour! have a wild day!??
