Vegan Cactus Rolls with Sautéed Vegetables

Ingredients

  • cactus
  • 1 chopped squash
  • 1 Roma tomato
  • 1/4 white onion
  • 1/2 cup cooked garbanzos
  • handful of spinach
  • 1/3 cup cilantro
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chopped garlic
  • salt to taste

Preparation

  1. Preheat oven to 375F

  2. Slice the cactus halfway

  3. Bake the cactus for 20-25 minutes or until soft and golden

  4. Sauté the vegetables: cook 1 chopped squash, 1 Roma tomato, 1/4 white onion, 1/2 cup cooked garbanzos, a handful of spinach, 1/3 cup cilantro, seasoned with 1 tsp paprika, 1/2 tsp cumin, 1/2 tsp chopped garlic, and salt to taste

  5. Once ready, add beans, hummus, vegan cheese, sauce, cashew cream, or other fillings inside the nopalitos

  6. Add the cooked vegetables on top and roll

  7. Enjoy with a delicious salsa
