Blueberry Crumble Bars

Ingredients

  • 1/4 scant cup coconut oil
  • 1/4 cup brown rice syrup
  • 1 cup oat flour
  • 1/3 cup rolled oats
  • 1 scoop vanilla protein powder (@macr0mike)
  • 1/2 tsp vanilla
  • 1 cup frozen blueberries (@oob_organic)
  • 2 tbs chia seeds
  • 1 tbs cornflour
  • 1 tbs @unicornsuperfoods black goji berry powder

Preparation

  1. Preheat oven to 180°c

  2. Mix base ingredients together in a bowl until combined

  3. Take 3/4 of mix and press into lined baking tray

  4. Set aside other 1/4 to use for crumble topping

  5. Make berry filling by adding all ingredients to a saucepan and heat on the stove

  6. Mash with a fork when mixture is warm

  7. Pour over base and sprinkle over the crumble

  8. Bake for 25 minutes or until nice and golden brown

  9. Best served heated and topped with coconut yoghurt or vanilla ice cream

  10. Store in the fridge for up to a week

  11. Makes 6 bars
