Blueberry Pancakes

Ingredients

  • 1 cup whole wheat flour or spelt flour (can use all purpose flour if prefer)
  • 1.5 tablespoons agave nectar
  • 1 tsp brown sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 3/4 cup almond or soy milk
  • 1.5 tbsp vegetable oil
  • 3-4 tbsp fresh blueberries

Preparation

  1. Combine dry ingredients in a bowl , and stir

  2. Add almond or soy milk, agave, vanilla extract and brown sugar

  3. Heat pan over medium heat, spray with cooking spray

  4. Once the pan is hot (30-60 seconds after heating) add your mixture

  5. Add blueberries

  6. Flip pancake when begins bubbling, cook until golden brown

  7. Top with bananas or syrup if prefer
