Bulgur Nasi Goreng Style

Ingredients

  • 1 cup of bulgur
  • 1 zucchini
  • 1/2 of a cucumber
  • 2-3 spring onions
  • lemon zest

Preparation

  1. Bring the bulgur to a boil with 2 cups of water, reduce the heat to a minimum, put on a lid and let the bulgur steam until softened

  2. In the meantime, chop your veggies fine and place them in a big bowl. I chopped my carrots differently, because I have a mechanical grater. A serious life saver if you have to grate any kind of hard vegetable ? Mix the bulgur with the vegetables. In a glass, mix the spice mixture with 150 mL of water and add it to the bulgur and the vegetables. Mix well and garnish with some spring onions and lemon zest
