Carrot and Ginger Soup

Ingredients

  • 4-5 carrots peeled and sliced 1 potato diced 2 green onions
  • 1 tsp salt 1/2 tsp pepper 2 tsp grated ginger
  • 3 cups vegetable or chicken stock
  • 1 orange juiced 1 tsp grated fresh turmeric
  • Parsley, dill or green onion for topping

Preparation

  1. Peel, dice and chop all veggies and add with the stock, salt and pepper to a pot

  2. Bring to a boil and simmer for about 20 minutes
