Carrot and Ginger Soup
Ingredients
- 4-5 carrots peeled and sliced 1 potato diced 2 green onions
- 1 tsp salt 1/2 tsp pepper 2 tsp grated ginger
- 3 cups vegetable or chicken stock
- 1 orange juiced 1 tsp grated fresh turmeric
- Parsley, dill or green onion for topping
Preparation
Peel, dice and chop all veggies and add with the stock, salt and pepper to a pot
Bring to a boil and simmer for about 20 minutes
