Cheesy Butternut Squash
Ingredients
- butternut squash: 4 cups chopped
- shallots: 2 chopped
- bay leaf: 1
- oat milk: 1/2 cup
- nutritional yeast: 2 tbsp
- garlic: 1/2 tbsp
- salt: 2 tsp
- pepper: 2 tsp
- liquid smoke: 1 tsp
- cheddar: 1/4 c (optional, substitute for 1/2 tbsp nutritional yeast)
- mozzarella: 1/4 c (optional, substitute for 1/2 tbsp nutritional yeast)
- toasted bread crumbs: 1/2 cup
- pasta water: 1/2 cup
- cooked macaroni: 2 cups
- vegan butter : 1 tbsp
- olive oil: 1-2 tbsp
Preparation
Roast squash and scallions in oven drizzled with olive oil
Add roasted veg to a blender with nutritional yeast, oat milk, garlic, salt, pepper and liquid smoke
Blend into a smooth sauce
Heat vegan butter in a pan and add bay leaf
Add sauce and stir in vegan cheddar and mozzarella
Add pasta water, cooked macaroni and stir in toasted breadcrumbs
