Cheesy Butternut Squash

Ingredients

  • butternut squash: 4 cups chopped⁠
  • shallots: 2 chopped⁠
  • bay leaf: 1⁠
  • oat milk: 1/2 cup⁠
  • nutritional yeast: 2 tbsp⁠
  • garlic: 1/2 tbsp⁠
  • salt: 2 tsp⁠
  • pepper: 2 tsp⁠
  • liquid smoke: 1 tsp⁠
  • cheddar: 1/4 c (optional, substitute for 1/2 tbsp nutritional yeast)⁠
  • mozzarella: 1/4 c (optional, substitute for 1/2 tbsp nutritional yeast)⁠
  • toasted bread crumbs: 1/2 cup⁠
  • pasta water: 1/2 cup⁠
  • cooked macaroni: 2 cups⁠
  • vegan butter : 1 tbsp⁠
  • olive oil: 1-2 tbsp⁠

Preparation

  1. Roast squash and scallions in oven drizzled with olive oil

  2. Add roasted veg to a blender with nutritional yeast, oat milk, garlic, salt, pepper and liquid smoke

  3. Blend into a smooth sauce

  4. Heat vegan butter in a pan and add bay leaf

  5. Add sauce and stir in vegan cheddar and mozzarella

  6. Add pasta water, cooked macaroni and stir in toasted breadcrumbs
