Coconut Kefir and Cashew Milk, Overnight Barley and Buckwheat Porridge

Ingredients

  • I mixed 1/2 cup of buckwheat flakes with 1/2 cup of barley flakes
  • 1 cup of freshly made cashew milk
  • 2 Tbs of hot water and 1 cup of coconut yogurt and left it on my kitchen counter overnight. Then I mixed in a tsp of coconut oil and cooked everything really gently for 5 minutes

Preparation

  1. I read about butterfly pea flowers on @samanthahadadi feed and I was desperate to get some because they create this beautiful blue colour naturally

  2. I bought some dried flowers, soaked a few of them in hot water and then added them to my porridge

  3. I sprinkled the blue water from the flowers over my porridge and created such a beautiful watercolour effect

  4. I added some pomegranate seeds, sprinkled everything with lime juice and it looked really pretty

  5. But then I started to add all of my yummy toppings and I created a chaos

  6. I will revisit my watercolour creation again without the toppings so you all can see how pretty it is

  7. For the toppings I used walnuts, coconut flakes, sunflower seeds, flaxseed, aronia berries @aroniaoriginal, blueberries, blackberries

  8. Then I added a Tbs of lucuma @hollandandbarrett which also served as the only sweetener in my porridge
