Easy Vegan Mac and Cheese Sauce

Ingredients

  • 1 golden potato
  • 1 carrot
  • 1/4 cup cashews
  • 1/2 cup vegan cheddar shreds
  • 1/3 cup non-dairy milk
  • 1 tbsp nutritional yeast
  • 1/4 tsp salt
  • pinch black pepper
  • dash of turmeric
  • dash of paprika
  • 6 oz pasta

Preparation

  1. Boil the potato, carrot and cashews for 20 minutes or until soft.

  2. Drain any excess water.

  3. In a high speed blender add the potato, carrot, cashews and the rest of the ingredients.

  4. Blend until you get a smooth, creamy sauce.

  5. Drizzle over your pasta and enjoy.
