Vegan Mac and Cheese with Veggies

Ingredients

  • Macaroni Pasta (wholewheat)
  • 3 medium potatoes
  • 1 carrot
  • 1 tbsp nutritional yeast
  • 1/4 cup soaked cashews
  • 1/2 tsp salt
  • pepper
  • lemon juice
  • 1/4 cup soy milk
  • 1/4 cup veggie cooking water

Preparation

  1. Poke veggies and peel if not organic, then place in glass tupperware with a bit of water and microwave for 10 minutes or steam until tender. Do not discard water.

  2. Cook pasta according to package instructions.

  3. Blend all sauce ingredients.

  4. Pour sauce over pasta and store extra sauce in a jar. This makes a hearty and healthy dinner.
