Vegan Mac and Cheese Dish

Ingredients

  • Macaroni Pasta - i use wholewheat (the sauce proportions will give you about 3 servings)
  • 3 medium potatoes
  • 1 carrot
  • 1 tbsp nutritional yeast
  • 1/4cup soaked cashews
  • 1/2 tsp salt
  • pepper
  • lemon juice
  • 1/4 cup soy milk
  • not shown but added 1/4 cup veggie cooking water

Preparation

  1. Poke your veggies (and peel if not organic) and place in glass tupperware with bit of water and microwave 10 minutes OR steam on pot till tender. Don’t throw water away!

  2. Cook pasta according to instructions

  3. blend all sauce ingredients

  4. pour on top of pasta and store extra sauce in jar! Such a hearty yet super healthy dinner ! Carbs on carbs.. ain’t that love at first sight!
