Fishcakes

Ingredients

  • 3-4 fillets of salmon (or any fish)
  • 2 large potatoes, mashed
  • Zest of 1 lemon, finely grated
  • 1 Tbsp parsley, chopped
  • 2 Tbsp flour or oats (I used Ready Brek)
  • Breadcrumbs

Preparation

  1. Peel and chip the potatoes, then boil until soft

  2. Grill the salmon at 180c for 5-6 minutes

  3. Flake the fish into a bowl, add the mashed potato, lemon zest, parsley and flour/oats

  4. Mix together

  5. Shape into fish cakes or fish fingers

  6. Roll in the breadcrumbs and shallow fry until golden brown
