Fishcakes
Ingredients
- 3-4 fillets of salmon (or any fish)
- 2 large potatoes, mashed
- Zest of 1 lemon, finely grated
- 1 Tbsp parsley, chopped
- 2 Tbsp flour or oats (I used Ready Brek)
- Breadcrumbs
Preparation
Peel and chip the potatoes, then boil until soft
Grill the salmon at 180c for 5-6 minutes
Flake the fish into a bowl, add the mashed potato, lemon zest, parsley and flour/oats
Mix together
Shape into fish cakes or fish fingers
Roll in the breadcrumbs and shallow fry until golden brown
