Gluten-Free Cinnamon Raisin Bread Pudding

Ingredients

  • 6 slices Little Northern Bakehouse cinnamon raisin bread
  • 2 cups almond milk
  • 2 tbsp melted coconut oil
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp corn starch
  • 1/4 cup raisins (or dried cranberries)

Preparation

  1. Preheat oven to 350 degrees.

  2. Cube bread and add to a large bowl.

  3. Stir in the rest of the ingredients until bread is coated with mixture.

  4. Add to a loaf pan.

  5. Bake for 25 min. until golden brown.
