Halloumi and Zucchini Fritters
Ingredients
- 225g grated halloumi
- 2 medium sized carrots
- 2 small grated courgettes (zucchini)
- 1/2 cup bread crumbs
- 3 eggs
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/4 tsp chilli powder
- 1 tbsp finely chopped spring onions
- 1 tbsp coconut oil
Preparation
Grate the halloumi, carrots, and zucchini
In a bowl, mix all ingredients except the coconut oil until well combined
Heat coconut oil in a skillet over medium heat
Form the mixture into fritters and cook in the skillet, flipping once until golden brown on both sides
