Halloumi and Zucchini Fritters

Ingredients

  • 225g grated halloumi
  • 2 medium sized carrots
  • 2 small grated courgettes (zucchini)
  • 1/2 cup bread crumbs
  • 3 eggs
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/4 tsp chilli powder
  • 1 tbsp finely chopped spring onions
  • 1 tbsp coconut oil

Preparation

  1. Grate the halloumi, carrots, and zucchini

  2. In a bowl, mix all ingredients except the coconut oil until well combined

  3. Heat coconut oil in a skillet over medium heat

  4. Form the mixture into fritters and cook in the skillet, flipping once until golden brown on both sides

  1. Involve kids in grating, mixing, and flipping for a fun Sunday morning activity
