Homemade Vegan Spinach Gnocchi
Ingredients
- 2 large potatoes
- 4 cups plain flour
- 1 cup spinach
- 1 tsp salt
Preparation
Boil the potatoes until soft and tender, or bake them if you prefer.
Mash them well and add the flour and salt, adding flour gradually until a dough forms.
Blend the spinach with a tiny bit of water to make it pourable, then add it to the bowl gradually to avoid adding too much water, and once a dough is formed, transfer to a floured surface.
Cut the dough into 4 equal pieces and roll each piece into a rope, then cut into small bite-sized pieces and repeat with the remaining pieces.
Optionally, roll each piece along the back of a fork to create ridges.
To cook, bring a pot of water to the boil and add salt, then add the gnocchi, stir gently, and cook until they float to the top, let cook for a further minute, drain, and serve with tomato sauce or whatever you like.
Freezing
Place the raw gnocchi in a container for freezing.
When ready to cook, add the frozen gnocchi directly to boiling water without defrosting to prevent sticking.
