Homemade Vegan Spinach Gnocchi

Ingredients

  • 2 large potatoes
  • 4 cups plain flour
  • 1 cup spinach
  • 1 tsp salt

Preparation

  1. Boil the potatoes until soft and tender, or bake them if you prefer.

  2. Mash them well and add the flour and salt, adding flour gradually until a dough forms.

  3. Blend the spinach with a tiny bit of water to make it pourable, then add it to the bowl gradually to avoid adding too much water, and once a dough is formed, transfer to a floured surface.

  4. Cut the dough into 4 equal pieces and roll each piece into a rope, then cut into small bite-sized pieces and repeat with the remaining pieces.

  5. Optionally, roll each piece along the back of a fork to create ridges.

  6. To cook, bring a pot of water to the boil and add salt, then add the gnocchi, stir gently, and cook until they float to the top, let cook for a further minute, drain, and serve with tomato sauce or whatever you like.

Freezing

  1. Place the raw gnocchi in a container for freezing.

  2. When ready to cook, add the frozen gnocchi directly to boiling water without defrosting to prevent sticking.
