Pasta Pastry Dough for Savory Pie Making

Ingredients

  • 300g rigatoni pasta
  • 2 potatoes (to yield 260g cooked)
  • Salt and pepper to taste
  • 1 egg for brushing

Preparation

  1. Cook 300g of pasta for 10 minutes and drain well.

  2. Blend the drained pasta in a food processor until smooth.

  3. Microwave a couple of potatoes for 6 to 8 minutes.

  4. Scoop out the cooked potato to get 260g and blend it in a food processor with a little salt and pepper to make a thick paste.

  5. Rest the paste in a bag for 40 minutes.

  6. Roll out the pastry between two sheets of greaseproof paper, keeping hands wet to prevent sticking.

  7. Line a pie tin with the pastry.

  8. Add a filling of your choice.

  9. Cover with a pastry lid.

  10. Brush the top with egg.

  11. Bake at 200°C for 20 to 30 minutes.

  12. Note that pasta pastry pies taste even better the day after.
