Pasta Pastry Dough for Savory Pie Making
Ingredients
- 300g rigatoni pasta
- 2 potatoes (to yield 260g cooked)
- Salt and pepper to taste
- 1 egg for brushing
Preparation
Cook 300g of pasta for 10 minutes and drain well.
Blend the drained pasta in a food processor until smooth.
Microwave a couple of potatoes for 6 to 8 minutes.
Scoop out the cooked potato to get 260g and blend it in a food processor with a little salt and pepper to make a thick paste.
Rest the paste in a bag for 40 minutes.
Roll out the pastry between two sheets of greaseproof paper, keeping hands wet to prevent sticking.
Line a pie tin with the pastry.
Add a filling of your choice.
Cover with a pastry lid.
Brush the top with egg.
Bake at 200°C for 20 to 30 minutes.
Note that pasta pastry pies taste even better the day after.
