Kale Pesto Pasta with Mushrooms

Ingredients

  • 1. 1 cup fresh kale
  • 2. 1 cup fresh basil
  • 4. 4 tbsp raw pepitas
  • 5. 4 tbsp hemp hearts
  • 6. 1 tsp salt
  • 8. 1/2 tsp pepper
  • 9. 3-4 tbsp avocado oil
  • 10. pasta of your choice
  • 11. 1 cup sliced mushrooms

Preparation

  1. Roast a head of garlic wrapped in foil at 400f for 30 minutes

  2. Let cool until cloves can me squeezed out

  3. Cook pasta as per package

  4. While the pasta is cooking, combine in a food processor: basil, kale, pepitas, lemon juice, hemp seeds, garlic cloves, salt, pepper

  5. Once combined, stream in the oil

  6. Let blend 3-4 minutes until smooth

  7. Sautéed your mushrooms in a pan over low medium heat

  8. Combine cooked pasta and pesto in a bowl

  9. Divide between serving dishes

  10. Place mushrooms on top
