Lentil and Vegetable Sauté with Smoked Paprika

Ingredients

  • 1 cup cauliflower florets
  • 1 1/2 cups cooked lentils
  • 2 tsp smoked paprika
  • Pinch of turmeric
  • 1 tbsp soy sauce
  • 1 inch fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, diced
  • 1 tbsp brown sugar
  • 1 tbsp tomato paste
  • 1 cup sliced mushrooms
  • 1 cup water or veggie broth

Preparation

  1. Add onion, mushrooms, bell pepper, and jalapeño and sauté for about 3-4 minutes.

  2. Add garlic and ginger and sauté until fragrant.

  3. Add tomato paste, cauliflower, lentils, soy sauce, and remaining seasonings. Sauté for about 2-3 minutes.

  4. Add sugar and water and bring to a simmer.

  5. Stir and simmer for 10-15 minutes or until thickened.

  6. Remove from heat and then serve.

  7. Makes about 2-3 servings.
