Lentil and Vegetable Sauté with Smoked Paprika
Ingredients
- 1 cup cauliflower florets
- 1 1/2 cups cooked lentils
- 2 tsp smoked paprika
- Pinch of turmeric
- 1 tbsp soy sauce
- 1 inch fresh ginger, minced
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 jalapeño, diced
- 1 tbsp brown sugar
- 1 tbsp tomato paste
- 1 cup sliced mushrooms
- 1 cup water or veggie broth
Preparation
Add onion, mushrooms, bell pepper, and jalapeño and sauté for about 3-4 minutes.
Add garlic and ginger and sauté until fragrant.
Add tomato paste, cauliflower, lentils, soy sauce, and remaining seasonings. Sauté for about 2-3 minutes.
Add sugar and water and bring to a simmer.
Stir and simmer for 10-15 minutes or until thickened.
Remove from heat and then serve.
Makes about 2-3 servings.
